1 ½ cups pitted sweet cherries, chopped
1 16-oz. can black beans, rinsed and drained
1 small yellow bell pepper, diced
¼ c. chopped onion
¼ c. chopped Anaheim or poblano chili pepper
2 tbsp. balsamic vinegar
1 garlic clove, minced
Salt to taste
Combine all ingredients in a medium bowl. Refrigerate at least 2 hours before serving. Makes a summery relish for grilled meat or poultry, especially duck.
