1/4 c. butter
1/4 c. all purpose flour
2 c. half-and-half
1 12-oz. can beer
1 lb. Velveeta cheese
1 tbsp. Worcestershire sauce
1/4 tsp. ground red pepper
1/4 tsp. hot sauce
1/8 tsp. salt
2 c. chopped broccoli, lightly steamed
Melt
butter in Dutch oven over medium-low heat; add flour, stirring until
smooth. Cook 1 min., stirring constantly. Gradually add half-and-half
and beer; cook over medium heat, stirring constantly with a wire whisk,
until thickened. Add cheese; cook over medium heat until cheese melts.
Stir in Worcestershire sauce, 1/4 tsp. red pepper, hot sauce, and salt
and steamed broccoli. Ladle into bowls and sprinkle with additional red
pepper before serving.
