GRILLED VEGETABLE PACKETS

Take a piece of extra wide aluminum foil and fill with a layer of thinly sliced, peeled or unpeeled potatoes, baby carrots, cut in half lengthwise, zucchini, mushrooms, Vidalia onion, red pepper strips, or any vegetables that you like.  Drizzle with olive oil, add salt, pepper, and any Asian grill seasoning or any type of seasoning you like. Fold the foil over and seal on ends and top. Cook about 20 minutes on the top rack of the grill. My kids really love them and they're not huge veggie lovers.
