SUGAR AND SPICE BACON

1 pound bacon, not thick-sliced, room temperature
1 1/4 cups brown sugar
2 teaspoons cinnamon

Cut each slice of bacon in half, crosswise. Mix sugar and cinnamon together and thoroughly coat each slice of bacon. Line jellyroll pan with foil.  Lay bacon flat on an oiled rack and place rack on the jellyroll pan. Bake at 350 degrees until bacon is crisp and sugar is bubbly, 15 to 20 minutes. The sugar can burn quickly, so watch closely. Let cool and serve at room temperature.
