DENISE'S TORTELLINI SOUP

1/2 pound bulk (or casing removed) Italian Sausage
1 medium onion
1 carrot
2 pkgs cheese tortellini (Buitoni)
 3 cans low sodium chicken broth
1 can diced tomatoes
1 can Italian style diced tomatoes
1/2 tsp. black pepper
1 tbsp Italian seasoning
1 cup water

Brown and crumble Italian sausage in 6-qt. pot. Add onion and carrot and simmer for a few minutes. Add chicken broth, tomatoes plus 1 cup water, pepper and Italian seasoning. Let simmer 20 minutes. To simmering broth, add the tortellini. Stir and simmer for more 8 minutes. Turn off heat and let sit for 10 minutes. Sprinkle with Parmesan cheese before serving. Better if refrigerated overnight!
