2 oranges, peel and pith removed
1 pt. fresh strawberries, stemmed and sliced
1/2 small red onion, thinly sliced
1/2 c. coarsely chopped pecan, toasted
8 c. romaine lettuce
Cinnamon Vinaigrette
Slice oranges on each side of membranes and remove sections. Combine oranges, strawberries, onion, pecan and lettuce in a bowl and drizzle with Cinnamon Vinaigrette; toss gently to coat. Divide salad evenly between six salad plates. Serves 6.
Cinnamon Vinaigrette
1/3 c. light olive oil
1/3 c. raspberry vinegar
1 tbsp. honey
1/2 tsp. kosher salt
1/2 tsp. ground cinnamon
1/4 tsp. freshly ground black pepper
1/4 tsp. Tabasco
Combine all ingredients in a jar; cover tightly and shake vigorously. Chill for several hours. Shake well before serving.
