GRAPEFRUIT AND AVOCADO SALAD

1 5-oz. pkg. mixed salad greens, washed and dried
1 grapefruit, peeled and cut into thin slices
1 avocados, thinly sliced
2 oz. feta cheese, crumbled
Balsamic Vinaigrette

Place greens on four individual salad plates. Layer grapefruit and avocados on top of greens. Sprinkle feta cheese over fruit. Drizzle with Balsamic Vinaigrette. Serves 4.

Balsamic Vinaigrette
1/4 c. balsamic vinegar
2 tsp. Dijon mustard
1 tbsp. honey
1 clove garlic, minced
1 small shallot, minced
1/4 tsp. salt
1/4 tsp. pepper
1/2 c. light olive oil

Whisk together first 7 ingredients. Gradually whisk in olive oil to blend completely.
