1-inch thick pork chops
8 plums
1 medium onion
1 clove garlic
2 oz. balsamic vinegar
4 tbsp. sugar
1 c. good red wine
salt and pepper to taste
toasted almonds
Season pork with salt and pepper; sauté or grill until outside is golden
Brown; transfer to roasting pan. Add all other ingredients, except almonds, into bowl and mix together. Pour over chops and roast in oven at 450 degrees for about 30 minutes, or until chops are done. Plate and ladle plums over chops, sprinkle with toasted almonds.
