1 box rotini noodles prepared according to package directions
1 cup pitted sliced black olives
1/2 cup sliced green olives
1 jar marinated artichoke hearts, chopped
1/2 diced red pepper
2 tomatoes, diced
1/4 purple onion, thinly sliced
2 cups broccoli flowerets, blanched and cooled
1 can kidney beans, rinsed and drained
1 cup pepperoni slices, sliced in half
4 ounces mozzarella cheese, cubed
1 bottle Italian or vinaigrette dressing
In a large bowl, mix all ingredients and refrigerate overnight to marinate. Drain dressing, if necessary, before serving.
